Still trying hard! Motivated by the weigh-in result yesterday, but must admit putting off exercising! I'm suffering from really bad headaches at the moment, which isn't a great help! I will still persevere.

Yesssss!!!!!! 73.1kgs! Know it doesn't sound like a lot, but in 2 weeks that's nearly 2kgs! I hope I can keep it up! I know I need to exercise more though! Any ideas for someone who hates exercising?

Second Monday
Another good day, what's helping too is the lovely weather! Nippy morning, but about 16° this afternoon with lovely blue skies! Amazing what that does for the morale. Diet? What diet?!
Nothing amazingly tasty or recipes to share today! Tea tonight was braised skinless chicken breast with organic ratatouille from a jar! Low in calories though!

Second Sunday
Well believe it or not today after a 1 1/2 hour walk in the woods near us, I had a roast beef lunch! I made sure the beef was lean, the roast potatoes were roasted in low-fat margarine (quite nice surprisingly!!), the yorkshire puds however were a disaster! I followed Rosemary Conley's recipe and they were cooked with no fat (page 134 of her book - "Low-fat meals)! The texture was awful, although they tasted ok! I ate copious quantities of spinach (my favourite veg) and had lashings of gravy!! Dee-lish! Yes, I had some wine, it is the weekend after all!

Second Saturday
Having had quite a light breakfast and then out teaching all morning, I was famished when I got back home! I don't think I ate enough at lunchtime and as result I felt very light-headed for much of the afternoon! I was determined not to give in though! Tea was lovely: Griddled tuna steak and a potato concoction that I put together to use up veg from the fridge:
Recipe for 4:
Take 4 medium potatoes, peel and slice (1/2cm thick), slice 1 onion, peel and slice 1 large carrot, slice one green pepper. Put into saucepan and cover with chicken stock. Just before the veg have softened too much add 1 sliced courgette. Drain veg and place into a gratin dish. Mix 300ml 0% fromage blanc, 125g cheddar cheese and season with salt and pepper. Mix this with the veg and bake in oven for 30mins (180°). Very nice!! Only naughty treat was the cheddar which you could always replace with a low-fat version!

Tonight I treated myself to a lovely staeak (only 70g come on!!) simply griddled with a really delicious low-fat white bean mash. Great thing about the beans is they're naturally low in fat and fill you up!
Here's the recipe (for 4):
Finely chop 1 medium onion and 1 clove of garlic, gently cook in a little water until soft. Add the contents of an 800g tin of white beans and 250ml of chicken stock and a handful of finely chopped parsley. Cook gently until the liquid has slightly reduced. Mash and add a TBspoon of 0% fromage blanc and season with salt and pepper. This would be nice with lamb, chicken or any white fish! Bon appétit!!
